Now, I must warn you.. This post has a little bit of all of my favourites wrapped up into one. I will admit that I do have a love for a good hamburger – not the fake fast food shit – a real hearty beef burger topped with the right fixings. And what could be better than pairing one of my favourite foods with a glorious cup of red wine? Nothing.
In this dish the wine is not playing a complimentary role on the side, but is infused right into the patty. I began with a red wine reduction flavoured with rosemary and garlic. This served as a mix in to be added to the patty and a luscious sauce to slather on after. And to top it all off caramelized red onion and goat cheese were used. Oh, and how can I forget.. The bacon! Yes, when you thought it couldn’t get any better, crisp bacon add a bit of saltiness and crunch. Convincing enough?

When I made this recipe I had made a single serving, but it can easily be transformed to feed a larger amount. This recipe is VERY rustic and is open to change.
Begin by reducing the red wine along with a sprig of fresh rosemary and a smashed clove of garlic. Feel free to add some peppercorns if you’d like. Once reduced and thickened, remove the rosemary and allow to cool.
Add your ground beef to the bowl and add a crushed clove of garlic, a few splashes of Worcestershire Sauce and some cracked black pepper. Add a tablespoon of the reduced wine. Form into patties and season with salt and pepper.
Grill them up as desired! While they are grilling slice your red onion and add it to a pan with a small dollop of butter and olive oil. Sauté on low heat until caramelized. If the onions begin to burn turn down the heat or add a bit of water. Once ready to assemble, top the patties with more red wine reduction and top that with bacon, caramelized red onion and chunks of goat cheese.
