Spinach and Salmon Baked Eggs

Here we have today’s post workout breakfast which is quick, easy and healthy! I love making baked eggs because you can whip them up with whatever meats and veggies that you have in your fridge. Luckily for me, my dad made an amazing smokey BBQ’d salmon on the charcoal grill last night and there happened to be a small piece left over. Also, this dish only takes one pan and a knife to prepare – less dishes, less mess. As I’ve mentioned, this was another one of my “lets throw everything into the pan” moments and I must say I was impressed with the results. Here’s how I did it. 



Olive oil 

Sliced red onion

Handful of spinach 


Leftover cooked salmon 

Goat cheese 


Heat olive oil in pan on a medium heat and add your sliced red onion. Sauté for a few minutes before adding the spinach and garlic. Once wilted crack in your eggs and top with a sprinkle of salmon and goat cheese. Add some cracked black pepper and throw under the broiler for a few minutes until the eggs are cooked to your liking. Enjoy with some toast, pita or just by itself!
