Nutella Crunch Cake

Layers of rich chocolate cake, crunchy wafers and Nutella ganache.. This cake is deadly. I love adding something a little extra and the crunchy contrast works perfectly. And yes, I realize the horrible ganache frosting job. I can’t be perfect all the time and I also haven’t made a layer cake in a while. Besides, I’m kind of digging the rustic look of this cake.

Things you will need…

  • 1 batch of your favourite chocolate cake recipe
  • Thin wafer cookies
  • Chocolate Nutella Ganache 
    • 8 ounces semi-sweet chocolate
    • 1 cup heavy cream
    • 1/4 cup Nutella

Firstly, make the ganache. Heat cream in a saucepan but do not bring to a boil. Finely chop chocolate and place in a medium sized bowl. Pour heated cream over chocolate and let sit for a few minutes until melted. Stir until incorporated and then stir in Nutella. Let this chill in the fridge for about an hour or until fully cooled.

To assemble simply layer the ganache and finely crushed wafer cookies in between the cake layers.
